🥒 Marrow Chutney

🧺 Ingredients
- 1.5kg marrow — chopped into small chunks
- 3 large cooking apples
- 450g onions (finely chopped)
- 250g sultanas (or raisins)
- 450g soft brown sugar
- 600ml malt vinegar
- 2 tbsp salt
- 2 tbsp ground ginger
- 2 tbsp mixed pickling spice (tied securely in a small piece of muslin cloth)
🍳 Method
- 🧂 Salt the marrow and leave covered overnight to draw out excess moisture.
- 🚿 Rinse and drain thoroughly.
- 🍲 Place the marrow, apples, onions, sultanas, sugar, vinegar, ginger and the muslin spice bag into a large pan.
- 🔥 Bring to the boil, stirring to dissolve the sugar. Reduce the heat and simmer uncovered for 1.5–2 hours, stirring frequently to prevent sticking.
- 🍯 The chutney is ready when it becomes dark, thick and jammy. Remove the spice bag, then ladle into warm, sterilised jars and seal tightly.
