🥒 Marrow Boats

Ingredients 🧺
- 🥒 1 medium to large marrow
- 🫒 1 tbsp olive oil
- 🧄 1 minced garlic clove
- 🥫 1 tin (400g) mixed beans, drained and rinsed
- 🍅 1 tin (400g) chopped tomatoes
- 🍅 ½ tbsp tomato purée
- 🌿 1 tsp ground cumin
- 🌿 1 tsp dried oregano
- 🌶️ ¼ tsp chilli powder
- 🧀 50 g grated cheese
- 🧂 Salt and pepper to taste
Method 👩🍳
- Preheat the oven to 180 °C (160 °C Fan / Gas Mark 4).
- Cut the marrow in half lengthwise.
- Using a spoon scoop out the soft middle seeds to create two hollow boats.
- Warm the oil in a pan over medium heat.
- Cook the onion and garlic until soft.
- Stir in the chopped tomatoes, tomato purée, mixed beans, cumin, oregano, and chilli powder.
- Simmer the bean mix for 5 minutes until thick.
- Season the hollow halves with salt and pepper.
- Place the marrow boats into a large baking dish.
- Spoon the warm bean mixture into the hollow centres of the marrow.
- Cover loosely with foil and bake for 35 minutes.
- Remove the foil, sprinkle grated cheese on top, and bake for another 10–15 minutes until the cheese has melted and the marrow is tender.
